I'm just going to be honest... ducks are not our thing.
But they are DELICIOUS.
We ended up with a freezer full of pasture-raised Peking ducks, and while this experiment turned out way better than expected, it's probably one we'll never repeat. If ducks weren't so messy and high-maintenance, I'd be all in. As it turns out, cows are a lot more my speed.
The funny thing is that the meat is incredible. Rich, flavorful, and unlike anything you'll find in the grocery store.
Pasture-raised duck often sells for $20/lb or more, but we're letting these go for less than our chicken pricing because I'd rather see them on your dinner table than sitting in our freezer.
So if you've ever been curious about duck, now's the time to try it.
